1. Combine all seasonings and half the salt and pepper to make a rub. Coat the roast with the rub and stab the spices into the roast with a fork. Don't worry, the holes will seal with seared. Cook two slices of bacon is a heavy skillet, remove and save bacon. At high heat, sear each side of the roast leaving the meat in the pan until it is easily released and a good crust is formed. Remove meat from pan and set aside. Pour wine into the pan and deglaze, adding butter, cooking until sauce is reduced to about half. 2. Roll out double the amount of Reynolds Wrap needed to wrap the roast, potatoes and baby carrots and place the roast in the center. Arrange potatoes and carrots around the sides and top and pour pan sauce over all. 3. With another sheet of Reynold's Wrap, form a packet that will lay flat and place the zucchini, red bell pepper, remaining salt and pepper, and two remaining slices of bacon inside. Seal well and place packet on top of roast. Seal the entire packet tightly, paying close attention to the creases. You do not want this to leak! After sealed, re-wrap the package again and seal for added protection. 4. Now for the fun part! Start the engine in your car and let it idle a few minutes and turn off. Raise the hood of your car and feel inside to find a good hot spot with room to place your food bundle. The exhaust manifold is usually a good place, or if there is enough clearance, the top of the radiator works well too. You may want to crumple a ball of foil that is the same height as your food bundle, put it in the spot you want to place your food and shut the hood. If your ball of foil is crushed, that's not a good place to put your food. Once a good spot is found, use wire to secure your package down and hit the road! It's a good idea to check your package after about 15 minutes to make sure it's still secure, and every couple of hours to make sure it isn't leaking. After about 250 miles, your roast and zucchini side is tender and delicious and best of all, home-cooked! ---------------------------------------------------------------------------
