Rock Cakes


1. Preheat oven to Gas 6/400F degrees.

2. Grease a baking sheet.

3. Put flour, salt, spice, butter/margarine in processer/mixer and mix.

4. Add egg and sugar and mix again.

5. Add enough milk/water to bind the mixture (if the mixture is too soft the cakes will flatten and spread).

6. FOLD in the dried fruit.

7. Put on the baking sheet in small rough heaps.

8. Bake for 15 minutes.
