1. Prep the veggies & chicken (cut into strips) and set aside. 2. Over medium heat, combine coconut milk with curry paste & blend well. 3. Add fish sauce, chicken broth, brown sugar, lime juice and garlic. 4. Bring to a boil, reduce heat & simmer for 2-3 minutes. 5. Add in ALL remaining ingredients (Except the Broccoli & Yellow Peppers) 6. Continue to simmer uncovered for 10 minutes, stirring occasionally 7. Add Broccoli & Yellow Peppers, simmer an additional 3-5 minutes 8. Serve over y9our favorite white rice 9.
