1. Heat vegetable oil in cast iron skillet until at temperature for frying tortillas. Fry corn tortillas, during process try to make them into a "bowl shape" by pressing tongs in middle of tortilla while frying. 2. Heat skillet and brown ground beef until cooked and crumbled. 3. Put enchilada sauce in pot and heat on stove. 4. Grate cabbage and add Miracle Whip, mustard, and sugar to make cole slaw in a bowl. Mix until combined. 5. Grate cheese and chop green onions for garnish. 6. To eat, take tortilla and scoop in some ground beef, top with cole slaw mix, cheese, and a scoop of enchilada sauce.
