Sablés Normandes À La Cannelle


1. Mash egg yolks in separate bowl.

2. Mix together dry ingredients.

3. Cut in butter.

4. Add egg yolks to other ingredients.

5. Knead dough until smooth.

6. Shape into a flattened ball and wrap and refrigerate for 1 hour.

7. Preheat oven to 375°.

8. Roll out dough to 1/4" thickness.

9. Dip rim of cookie cutter(circular, 2" diameter recommended) in flour.

10. Cut out cookies and arrange on buttered baking sheet.

11. Bake 10 to 12 minutes or until lightly brown.

12. Remove immediately from baking sheet and let cool on wire racks.
