Salatet Fassoulia (White Bean Salad)


1. If using dried beans, bring beans and 6 cups water to a boil over medium high heat; reduce heat to a simmer and cook until tender, about 50 minutes.

2. Drain beans and place in a bowl; set aside.

3. Whisk together oil, lemon juice, parsley, cumin and garlic; drizzle over beans.

4. Season beans with salt and pepper and toss.

5. Serve cold or room temperature.
