1. Using a vegetable peeler make the cucumber into long wide strips. 2. Set aside. 3. Put the water, wine, zest, and dill in a deep frying pan. 4. Bring it up to the boil. 5. Reduce heat to a simmer. 6. Add salmon. 7. Simmer for 5-6 mins until the fish flakes easily. 8. For the sauce combine ingredients in a bowl. 9. Season well. 10. Serve salmon on a bed of the cucumber, make it look really pretty. 11. Drizzle with the sauce. 12.
