1. Preheat oven to 350ºF. 2. In a small bowl, combine coffee, cream, 1 egg, and vanilla extract; set aside. 3. In a large mixing bowl, combine baking mix, sugar, and chocolate chips. 4. Add wet ingredients to dry ingredients and work into a crumbly dough. 5. On a lightly floured surface, form dough into a 9-inch disk (approximately 1/2 inch thick). 6. Cut into 12 wedges and place on an ungreased cookie sheet. 7. Set aside. 8. In a small bowl, combine 1 tablespoon cream and remaining beaten egg. 9. Brush tops of scones with egg mixture and sprinkle with sanding sugar. 10. Bake 18-20 minutes or until golden brown. 11.
