1. Heat oven to 400°F In a 2 quart baking dish, combine potatoes, chicken, pico de gallo, 1 cup cheese and corn; mix well. Spread mixture evenly in dish. Cover with lid or foil. 2. Bake for 25 to 35 minutes or until hot and bubbly. Top with remaining cheese. Bake, uncovered, 5 minutes or until cheese melts. Let rest 10 minutes. Top with lettuce, tomatoes and avocados.
