1. Wash apples; cover with water and let soak at least 8 hours or overnight.

2. Cover ham with cold water and simmer for 3 hours.

3. Add apples and their water; continue to boil another hour.

4. Add brown sugar.

5. Add dumplings to the pot the last 18 minutes before service.

6. To make dumplings: Sift dry ingredients together.

7. Add egg, melted butter and enough milk to make a stiff batter.

8. Drop by teaspoons into boiling liquid.

9. Cover tightly and cook for 18 minutes.

10. Serve piping hot on a large platter.
