Scottish Lace Cookies


1. Preheat oven to 325 deg F.

2. Cream together shortening and sugar. Beat in eggs, then extract. Gradually blen in oats and salt.

3. Drop dough by spoonfuls 2 in apart on cookie sheets. Flatten cookies with the bottom of a glass dipped in flour. Bake 12-15 min until golden brown. Transfer to wire racks for cooling.
