1. Peel lemons with (just zest) with veg. peeler.

2. Eemove pith (white part).

3. Alice lemons very thin.

4. In 6-8 qt bowl place lemon peel lemon slices and sugar (minus 5 tsps).

5. Pour water over and stir let cool to tepid.

6. Stir in yeast.

7. Let stand 12 hrs uncovered.

8. Add 3 raisins and 1 tsp sugar to each bottle.

9. Strain into bottle (5 qts bottles) with lids or corks and seal.

10. Let stand at room temp for 1-2 days until raisins float.

11. Chill till ready to serve.
