1. Heat olive oil over medium heat in small saucepan with lid.

2. Add onion and cover.

3. Cook onion over medium heat, covered, stirring occasionally, until onion begins to burn. Yes, burn!

4. Add black beans (undrained) and simmer, covered, about 5 minutes.

5. Remove from heat. Add cumin and vinegar.
