Simple Menudo With Pepperoni


1. Bring to a boil the water, pig's feet, onion and garlic and then turn down heat to low and simmer, covered, for about 1 1/2 hours.

2. Add tripe, pepperoni, chili powder, menudo seasoning and hominy. Bring back to a boil and then simmer, covered, for about 1 1/4 hours or longer until tripe is to your preferred tenderness. Add salt and pepper to taste.

3. Enjoy piping hot with raw onion, chopped cilantro and a splash of lime juice for garnish.
