1. Add oil to a skillet on medium heat. 2. Once hot, add sliced shallots and green curry paste. 3. Cook until shallots soften, approximately 3-4 minutes. 4. Add fish oil to skillet and immediately after pour in the can of coconut milk. 5. Bring to a boil. 6. Add chicken and red bell pepper strips. 7. Let simmer for 7-8 minutes until chicken is done. 8. Add chopped/torn basil. 9. Add juice of one lime. 10. Simmer 2-3 minutes. 11.
