1. In a large non-stick skillet coated with cooking spray, cook beef and peppers over medium heat until meat is no longer pink, drain. 2. Stir in the salsa, corn, and water and bring to a boil. 3. Stir in tortilla strips, reduce heat, cover, and simmer for 10-15 minutes or until tortillas are softened. 4. Sprinkle with cheese, cover and cook 2-3 minutes longer or until cheese is melted. 5.
