1. Hull the fruit, save a dozen whole berries for garnish. 2. Liquidize or mash them and pass them through a fine sieve to remove pips. 3. Beat in the sugar until dissolved, add water (if using) and strained lemon juice and pour into a freezing container. 4. Freeze for 40 minutes. 5. Remove and beat with a "silver" or "wooden" spoon and freeze again for 4 hours. 6. Serve in tall glasses. 7.
