1. add olive oil to frying pan and heat on medium heat. 2. add onions and sweat for 8 minutes. 3. add tomatoes and heat until saucy. 4. combine vinegar, cornstarch, sugar and curry powder and bring to a boil, stirring constantly. 5. add jam and combine with tomato mixture. 6. allow to cool and reserve until ready to complete salad. 7. add mixture to bananas and serve over a bed of fresh spinach. ---------------------------------------------------------------------------
