Spaghetti With Garlic And Oil


1. Put the first 4 ingredients into a bowl. Stir well. Oil may be increased to 1/2 cup if desired.

2. Bring salted water to a boil and cook pasta. Remove a little starchy water and drain when al dente.

3. Toss with the sauce, adding a little water, if necessary.

4. Add parsley to toss again.

5. Drizzle each serving with a little good oil, if desired.

6. Toss with pecorino or Parmesan, if desired, I've had it that way and it is just okay, an Italian would shudder.
