1. In a soup pot, heat olive oil over med-high heat. 2. Add shallot; saute 3 minutes. 3. Add broth, zucchini, mushrooms, and tomatoes; bring mixture to a boil. 4. Decrease heat to medium; simmer 15 minutes. 5. Stir in ham, chicken, thyme, salt, and pepper to taste; continue to simmer 5 minutes. 6.
