Spanish Meatballs


1. In a large bowl, combine turkey, salt , half the chopped onions, half the garlic, paprika, 1/2 cup roasted red peppers, breadcrumbs, parsley and egg. Mix turkey until well combined and set aside.

2. In a large pot on medium, heat oil and sauté remaining onions until transparent. Add all remaining ingredients and bring to a simmer.

3. With slightly damp hands, form turkey mixture into meatballs, approximately 2 tablespoons in size. Gently drop meatballs into simmering sauce until all the turkey mixture is finished. Cover pot and let simmer on low for 1 hour or until meatballs ore cooked through.

4. TO MAKE RICE:.

5. Follow package directions, adding saffron threads to water. Try using vegetable or chicken stock instead of water for more savory rice.
