1. Wash and peel potatoes. Cut up into chunks. 2. Bring a large pot of water to boiling and cook potatoes until fork tender. 3. Drain. Set aside to cool briefly. 4. Transfer potatoes to a large serving bowl. 5. Combine the mayonnaise and smoked paprika. Add to the potatoes. 6. Add the remaining ingredients and stir to combine. 7. Cover and chill. 8. Before serving, adjust seasonings if necessary and garnish with fresh parsley if desired. 9. Tastes better the second day. ---------------------------------------------------------------------------
