1. Heat the oil in a pot over medium heat. 2. Add the onion and saute for 3 minutes or until softened. 3. Add the garlic, chili powder, cumin and coriander and saute for 1 minute longer. 4. Add the remaining ingredients and bring to a boil. 5. Turn the heat to low and simmer for 20 to 25 minutes or until thickened. 6. Season with salt to taste. 7.
