1. Melt butter in a saucepan, add mushrooms, cover and cook until soft. 2. Stir in couscous, salt, turmeric, cumin, coriander, anise, cinnamon and chives. 3. Cook for 1-2 minutes. 4. Pour vegetable stock over the mixture, cover and set aside for 5 minutes until the liquid is absorbed. 5.
