1. Lightly brown onion in oil. 2. Add curry powder, garlic, bay leaf, tomato puree, paprika, salt and peri-peri. 3. Stir through onion and cook for 1-2 minutes. 4. Add water, bring to the boil again and add fish. 5. Reduce heat and simmer for 10 minutes or until fish is cooked adding more water, if necessary. 6. Thicken sauce with cornstarch. 7.
