Spicy Mexicali Zucchini


1. Wash and dry zucchini.

2. Slice off tops and bottoms and discard.

3. Cut zucchini into bite size pieces.

4. Heat olive oil over medium high heat until warm but not hot.

5. Add rest of ingredients to warm oil.

6. Stir often and cook until zucchini is soft and cooked through but not mushy and liquid is reduced to a sauce like consistency.

7. Serve.
