1. In a large pan, heat the oil. Add the diced onions and sauté until soft. 2. Add the minced garlic to the onions and sauté until the garlic is fragrant. 3. Stir in all of the spices, water, wine and tomatoes and cook for several minutes. 4. Add the sliced zucchini and peppers and cook until the zucchini is tender. 5.
