1. In a small skillet, saute onion and garlic in oil for 3 minutes; set aside. 2. In a mixing bowl, combine the ricotta, 1/2 c. 3. mozzarella, cream cheese, 4 tablespoons Parmesan, Italian seasoning, salt and pepper; beat until smooth. 4. Stir in the onion mixture and spinach. 5. Spoon into the manicotti shells. 6. Pour half of the spaghetti sauce into a greased 13x9 inch baking dish. 7. Arrange shells over sauce; top with the rest of sauce. 8. Cover and bake at 350 degrees for 25 minutes. 9. Uncover; sprinkle with remaining mozzarella and Parmesan. 10.
