1. Heat oil in a non stick skillet. 2. Add onions& garlic, cook 4 minutes. 3. Add potatoes and cook 2 minutes longer. 4. Stir in the remaining ingredients and bring to a boil. 5. Reduce heat, cover and simmer for 40 minutes or until the liquid has cooked down and potatoes are tender. 6.
