1. Combine the beef, onion and celery. Season with salt and pepper and combine well. 2. Stir in the herbs and mustard. 3. Divide the mixture into 8 equal portions. 4. Place 4 on a work surface and flatten slightly. 5. Place the crumbled cheese in the center of each. 6. Flatten the remaining 4 portions and place on top. 7. Mold together, encasing the crumbled cheese and shape into 4 burgers. 8. Grill under moderate heat for 10 minutes, turning once. 9.
