1. Heat pan and dry fry the dried chilies. Set them aside to cool. 2. Add oil and cook chopped onions over medium heat for 2-3 minutes until softened and golden brown. 3. Add sugar, stock, fish sauce, chilies, and tamarind juice, stirring constantly until sugar has dissolved. Bring to a boil and then lower heat slightly. 4. Add prawns, garlic, and shallots.
