1. Spray 9x13" dish with cooking spray. 2. Cut or rip bread into smaller pieces and spread in pan. 3. Whisk pumpkin, eggs, milk (I use almond milk), sugar, flavorings , salt and spices. 4. Pour mixture over bread, pushing bread down so it all soaks up the good stuff. 5. Cover and refrigerate overnight (or a few hours). 6. In a separate bowl, mix together streusel topping (flour, brown sugar, cinnamon and nutmeg. 7. Cut the butter into the flour mixture until pieces are pea-size. 8. Cover and refrigerate. 9. An hour before serving time, preheat oven to 350 degrees. 10. Uncover bread mixture and top with streusel mixture. 11.
