Stuffato Alla Chiassese (Swiss Roast Beef, Southern Style)


1. Preheat oven to 350°F.

2. Combine garlic, salt, pepper and flour.

3. Rub mixture into meat.

4. Melt butter in a large roasting pan on the top of the stove (make sure it is both stovetop- and oven-safe).

5. Add onions and meat.

6. Brown meat well on all sides.

7. Place bacon strips on top of meat and secure with toothpicks.

8. Pour the wine over the meat.

9. Roast about 2 1/2 hours.

10. Add potatoes and tomatoes.

11. A small amount of water may be added to prevent scorching.

12. Continue to roast until desired degree of doneness is reached, about 30-45 minutes for rare.
