1. Preheat the oven to 400 degrees. 2. Saute the shallot, 2 tbsps butter, and 1 cup of button mushrooms. 3. Butterfly cut the beef tenderloin. 4. Coat the beef tenderloin with soy sauce and salt and pepper the beef. 5. Cool down the mushroom and shallots in the fridge as not to cook the inside of the beef. 6. Once cooled place the mushroom and shallot on the beef. 7. Fold over the beef and tie up with cooking string. 8. Cook the beef at 400 degrees for 40 minutes. 9.
