Sun- Dried Tomato Pasta W- Shrimp


1. heat oil on medium -high heat in deep saute pen.

2. saute shallot & garlic in oil until shallot soft and garlic fragrant (3-5 min.).

3. cook angel hair pasta in lightly salted boiling water to al-dente.

4. drain pasta and reserve 1 cup pasta water.

5. add sun-dried tomatoes, artichokes, mushrooms. shrimp, and butter to shallot/garlic mix.

6. saute until shrimp are pink (5 min.).

7. add white wine or chicken stock , red pepper flakes, 1/2 cup pasta water and bring to simmer.

8. re-hydrate angel pasta with remaining 1/2 cup pasta water and add to pan, toss well.

9. serve with parmesan cheese.
