1. Drain the pineapple, keep some juice for the icing. 2. Drain the pineapple again in a seive and push down with the back of a spoon. 3. Combine the flour, sugar, eggs, cream and butter in a large bowl and beat until smooth (1-2 minutes). 4. Fold in the pineapple. 5. Pour into a greased and18x 28 cm tin. Bake at 180oC for 20-25 minutes. 6. Cool and ice in the tin. 7. Icing: 8.
