1. Preheat oven to 200°C. 2. Grease gem trays- the really little muffin tray! 3. Sift flour, salt baking powder together. 4. Mix in cheese. 5. Mix in butter until it forms a dough. 6. Roll walnut sized balls of dough and place them in the gem tray. 7. Press small hollows into each ball with the handle of a wooden spoon. 8. Spoon in a small quantity of jam into each hollow. 9. Bake for approximately 15 minutes. 10. Cool on a wire rack and store in an airtight container. 11. Just before serving, top up hollows with additional jam. ---------------------------------------------------------------------------
