1. Rub the roast all over with salt and pepper. 2. In a large casserole or Dutch oven, heat oil. 3. Brown the meat on all sides; remove, and set aside. 4. Melt the butter in the same Dutch oven. 5. Add the onions, and garlic (if using) stirring for about 10 minutes, or until soft. 6. Place the browned meat on top of onions in the casserole. 7. In a small bowl, combine the sugar with the vinegar; pour over meat. 8. Cover, and bake in 300 degree oven for 2 hours, basting occasionally with pan juices. 9. Stir in prunes, and cook, uncovered for 30-60 minutes longer, or until meat is tender. ---------------------------------------------------------------------------
