1. Mince prawns in blender or food processor. 2. Add ginger, garlic, lemon grass, coriander and fish sauce and mix well. 3. Add egg and stir through. 4. Season to taste. 5. Check consistency and add flour as required to stiffen up mixture. 6. Make into small patties using 1 teaspoon of mixture at a time. 7. Refrigerate for 1 hour then pan fry or cook on bbq grill until golden. 8. Add sweet chille sauce and stir gently until sauce caramalises and adheres to patties. 9.
