1. Place the mangoes, chilies, and ginger in a large pan. Add the lemon rind and juice, and stir in the water. Bring to a boil, and simmer for 20 minutes. 2. Add the sugar, and heat gently until the sugar has completely dissolved. Bring to a boil, and boil for 10 minutes or until a thick consistency is reached. 3. Stir in the sultanas and balsamic. Cook for an additional 5 minutes. 4. Let cool slightly, and pour into warm sterilized jars.
