1. Set oven to BROIL. 2. Cut pita pockets in half. 3. Divide the cheese and stuff in the pockets. Drizzle extra virgin olive oil on the cheese and pita. 4. BROIL just until pita starts to brown and cheese barely begins to melt. *WATCH* broiling carefully! 5.
