1. Preheat oven to 325. 2. Coat a 9-inch quiche dish or deep-dish pie plate with nonstick cooking spray; set aside. 3. In a food processor or blender, mix corn, tomatoes, cream cheese, sour cream, garlic, chili powder and 1 cup cheese. 4. Stir in chicken by hand. 5. Spoon mixture into prepared dish. 6. Top with remaining 1 cup cheese. 7. Drizzle with olive oil. 8. Bake for 45 minutes. 9. Garnish as desired.
