1. BARBECUE SAUCE: 2. Combine all ingredients and mix well. 3. Season to taste with salt and white pepper. 4. Set aside. 5. SAFFRON RICE: 6. Brush pan with clarified butter. 7. Add rice, chicken stock, saffron, cayenne pepper and onion. 8. Stir. 9. Cover pan with foil and bake at 400°F for 1 hour and 10 minutes. 10. When rice is done, remove foil and stir in green onions and red pepper. 11. Season to taste with salt and white pepper. 12. BEEF: 13. Place meat and vegetables alternately on skewer, season with salt and pepper and brush with oil. 14. Grill on both sides to medium-rare. 15. Remove from grill and brush generously with barbecue sauce. 16. Place on saffron rice and garnish with more sauce. 17.
