The Filipino Elvis Sandwich


1. Melt 1 tablespoon butter in a non-stick skillet over medium heat. Place the sliced bananas into the skillet and fry until golden brown on all sides, about 2-3 minutes per side.

2. Spread the Halayang Ube evenly on both pieces of bread. Place the fried banana slices on one of the slices, then place the other slice on the bananas to form a sandwich. Spread the remaining 2 tablespoons of butter evenly on both sides of the sandwich.

3. Fry the sandwich in a skillet over medium-high heat until both sides of the sandwich are golden brown and crisp, about 2-3 minutes per side.
