1. Cut cucumber in half and spoon out the seeds. Take a grater, or shredder (whatever you have) and grate the cucumber. If you don't have either, give it a small dice. 2. Squeeze all the excess water out of the cucumber, using paper towels or dish towels. Srinkle the salt over the cucumber to further dehydrate it. 3. Finally, mix all the ingredients together and refrigerate. Can be made several hours ahead, or even a day. ---------------------------------------------------------------------------
