Tilapia A La Portuguesa


1. Preheat oven to 375º.

2. Place fillets in a baking dish.

3. Brush with olive oil and season with salt and pepper.

4. Layer vegetables over fish, and add wine if using.

5. Season veggies with salt and pepper to taste.

6. Cover baking dish tightly with foil.

7. Bake 25-30 minutes or until fish flakes easily with a fork, and veggies are tender.

8. Another way to do this is to pan fry the fish in a little olive oil, sautee the vegetables until tender and spoon the sauce over the fish.

9. I just think that the oven is easier.

10. Garnish with fresh chopped parsley.
