Tirobiskotakia - Layered Cheese Squares


1. Melt butter in heavy saucepan.

2. Blend in flour, stirring constantly for 2 minutes to form a paste.

3. Add milk with salt and pepper; stir constantly until sauce thickens.

4. Remove from heat.

5. In a large bowl, combine cheeses with eggs; pour into cream sauce and mix well. Set aside.

6. Remove prepared dough from refrigerator; allow to come to room temperature.

7. Press into bottom of 13 X 9 -inch baking pan.

8. Bake shell at 450°F for 10 minutes.

9. Remove from oven; pour filling over crust.

10. Bake at 350°F for 30-35 minutes.

11. Let stand 15 minutes before cutting into squares.

12. Garnish with olives.

13. Serve warm.
