1. Peel and cook potatoes. Mash and season with pepper. 2. Finely chop onion and soften in a pan in a little oil. Add to potatoes with eggs. Mix until smooth and creamy. Stir in herbs and chopped sun-dried tomatoes. 3. Spoon mixture into a non-stick frying pan sprayed with a little oil. Cook over a medium heat for 5-6 minutes either side, or shape mixture into 4 patties and cook. ---------------------------------------------------------------------------
