1. Cut a slice off the top of the tomatoes and scoop out the insides to leave a thick shell. 2. Sprinkle the inside with a little salt and allow to drain upside down for 15 minutes. 3. Mix together the avocado, onion, cilantro, lime juice, diced tomatoes, optional jalapeno (although I would NOT recommend leaving it out!), salt, and pepper and stuff the tomatoes with the mixture. 4. Serve chilled or at room temperature on a bed of lettuce leaves if desired. ---------------------------------------------------------------------------
