Traditional Welsh Rarebit


1. Heat the grill. Lightly grill the bacon, if used. Slice the tomatoes, if used. Grate the cheese and mix into a stiff paste with the milk in a bowl, stirring in the mustard and pepper. Lightly toast the bread, and spread one side with butter, then generously cover it with the cheese mixture. Put under the hot grill for 1-2 minutes, until the cheese starts to bubble. Top with the bacon, tomato slices, or pickle, and return to the grill for another minute, to heat the topping and brown the cheese. Serve at once.
